Guess Again Carrots

Our pastor's wife, Pam Dunn, shared this recipe with me over 30 years ago.

It is an unusual and delicious way to serve carrots.

pinch tips: How to Shuck, Cook, and Cut Corn


2 lb
carrots, or more
2 Tbsp
1 medium
onion, chopped
8 oz
sharp cheddar cheese, grated
1/2 tsp
kosher salt
1/2 tsp
freshly ground black pepper
1/4 c
green bell pepper, minced (optional}
bread crumbs (optional)
parsley (optional)
more butter (optional)

Directions Step-By-Step

Cook carrots until soft. Mash and add remaining ingredients and bake 45 minutes at 350-degrees.
Optional ingredients may be sprinkled on top before baking.
