Grilled Zucchini Rings

Lillian Russo

This is a great way to use up those really huge zucchinis that people give you from their garden! Just peel them and slice into thick rings. But don't forget to cut out the huge seeds from the center of each slice!

The marinade in this recipe is great because after the zucchini is grilled you can taste a sweetness mixed with a hint of garlic. Its a great side dish or served with other grilled veggies in a sandwich.
