Green Tomato Casserole

My aunt gave me this recipe and it has become one of my favorites,the original recipe uses Velvetta cheese but I don't like that,so I use cheddar or jack.It is so simple and so deliscious!
No amounts are needed,just make as much as you want to serve.
For a lighter version,you can omit frying the tomatoes and just bake until they're tender.

Ingredients

canola oil
salt and pepper
green tomatoes,sliced thin
your favorite mexican salsa
cheddar cheese, shredded

Directions

Season tomatoes slices with salt and pepper to taste.Heat a small amount of oil in a skillet ,saute tomatoes until slightly soft.
In a oven proof dish,layer tomatoes,spread with salsa and sprinkle with cheese.Make as many layers as you need.Bake 350 degrees until tomatoes are tender ad dish is bubbly.

    Yum, I have a bunch of green tomatoes, and this looks great! Some bread crumbs on top might be nice too, and some garlic powder.

    I was thinking of adding crushed tortilla chips to mine. I use El Milagro because they are restaurant quality and very lghtly salted.

    LaWanda, this sounds very yummy. I am right there with you on switching up the cheese and I am sure that the switch to cheddar makes this even more flavorful! Look forward to trying it. Do you use this as a side dish or serve it alone?
