L's StoryMy aunt gave me this recipe and it has become one of my favorites,the original recipe uses Velvetta cheese but I don't like that,so I use cheddar or jack.It is so simple and so deliscious!
No amounts are needed,just make as much as you want to serve.
For a lighter version,you can omit frying the tomatoes and just bake until they're tender.

green tomatoes,sliced thin
your favorite mexican salsa
cheddar cheese, shredded
1Season tomatoes slices with salt and pepper to taste.Heat a small amount of oil in a skillet ,saute tomatoes until slightly soft.
In a oven proof dish,layer tomatoes,spread with salsa and sprinkle with cheese.Make as many layers as you need.Bake 350 degrees until tomatoes are tender ad dish is bubbly.
