Fresh or frozen green beans usually taste better a little under-done rather than limp and over cooked.. To cook ahead of time, place them in a saucepan with a pinch of sugar and pour boiling water on top. Do not cover, boil fast. Drain. Place in a bowl and cover with ice cubes, and refrigerate for 2 to 12 hours. Then reheat with only the liquid that clings to them over medium heat and they will be ready to serve.

Variations:
1....Brown sliced almonds in butter,add a few drops of cider vinegar, and pour over hot beans.
2....Add a teaspoon of prepared horse radish to melted butter. Blend into cooked beans.
3...Blend them with fried onions and chili sauce.
4...Boil them with a pinch of savory. Drain, flavor with lemon juice, minced fresh dill, and butter.
5...Stir a piece of butter in the cooked beans until it melts, add fresh lemon juice to taste. Place into a hot service dish and sprinkle with parmesan.
6...Save a cupful of stewed tomatoes and blend with the cooked beans.
7...Slice fresh mushrooms, stir them in oil or butter with a piece of garlic, or a bit of minced green onion. Sprinkle over the beans.
