Frijoles Bororacho's (Drunk Beans)
dried pinto beans
pickled jalapeno slices
1 1/2 tsp
1 or 2 bottle
1Soak cleaned pinto beans in cold water in large pot.
Make sure water level is 2 inches above beans.
2While beans are soaking, chop onion. Cut salt pork into 1 inch pieces. Or you can leave them whole. Drain sliced jalapeno's and put in a cup.
3After beans are soaked add chopped onions, salt pork, and pepper and bacon drippings. Bring to a boil. After the beans are boiling good, turn down to low. Let them cook for at least an hour and half and then add the jalapeno's(use 1/4 cup or less for those who don't like hot peppers). Add one beer and if extra needed add from other bottle of beer. Let beans cook till soft about 3 to 4 1/2 hours. When almost cooked add fresh chopped cilantro. Serve in bowls or on side of plates with the meal.

This recipe for Frijoles Bororachos (Drunk Beans) sounds very good. I grewup creating the pintos with a Bone-In-Ham and it's Broth. I am certainly going to try this version with the Salt Pork and Bacon Drippings. Karol thanks so much for sharing these delicious recipes with those of us here as members of JAP!
