I love this recipe as a delicious hors d'voures when entertaining friends and family for a lite supper meal.

Ingredients

1/2 c
oil
3 to 4
squash, cleaned and cut in 1/4th inch slices
salt each squash slice on both sides, to taste
1/2 c
plain flour
1/2 c
cornmeal

Directions Step-By-Step

After sprinkling both sides of each squash slice, allow the salt to draw out beads of moisture from each squash piece. This should take 10 to 15 minutes.

Combine flour and cornmeal; coat each piece of squash in the flour/cornmeal mixture, coating both sides.

Pour oil in teflon skillet and fry prepared squash on medium high heat til golden on both sides.

Drain the fried squash on paper towels and serve.
