FRESH TOMATO AND PEPPER SALSA

- 1 medium
- red onion cut in 1/3 dice
- 2 medium
- tomatoes halved and seeded cut into 1/3 dice
- each red, yellow, and green bell pepper cut into 1/3 dice
- 3/4 c
- olive oil, extra virgin
- 3 Tbsp
- fresh lemon juice
- kosher salt and pepper to taste
1In a large bowl combine the onion with tomato, bell pepper, olive oil and lemon juice.
2Add a large pinch of salt and pepper and mix well.
3Cover and refrigerate overnight. Bring to room temperature before serving.
