Peel eggplant and cut in cubes. Place in pot with water to cover and boil til tender. Drain.
Sift flour, sugar, baking powder, and salt in bowl. Add egg and milk and blend together with dry ingredients. Mash eggplant and add to mixture. Mix well.
Drop by tbsp into hot grease. Cook quickly on 1 side and flip. Cook til golden brown.
Place on cookie sheet lined with paper towel. Sprinkle with powdered sugar or regular sugar. Enjoy!
