reduced-fat, shredded cheddar cheese
Heat oven to 425. Spray a 2-quart casserole dish w/ cooking spray. In bowl, combine sour cream, sugar, salt and pepper.
In another bowl, combine scallions, bacon bits and cheese. Place 1/3 of the rice in casserole dish. Layer w/ 1/3 of the sour cream mix, then 1/3 of the cheese mix.
Repeat layers until all ingredients are used, ending w/ the cheese mix. Bake 30 mins, or until bubbly.
