Ingredients For curried taro, yam and/or breadfruit

2 lbtaro root, yam, breadfruit (or combination thereof )

1 Tbspbutter

2 Tbspvegetable oil

1inch fresh gingerroot, crushed

1garlic clove, crushed

1 tspground cumin
-
4cardamom pods
-
1/2 tspground cinnamon
-
1/2 tspchili powder
-
2 tspground coriander
-
salt and pepper, to taste
How To Make curried taro, yam and/or breadfruit

1Peel vegetable(s), cut into pieces and steam or boil until half cooked.

2Cool and cut into 1/2" cubes. Heat butter and oil in large pot or fry pan.

3Add ginger and garlic and stir-fry over low heat for 2-3 minutes.

4Add the prepared vegetables and spices, tossing the spices until well mixed before adding.

5Put a lid on the pan and steam for a few minutes.

6Season to taste.
