1/2 c
green onion slices
1/2 c
chopped red pepper
1/2 c
butter, divided
2 - 10 oz
packages of sweet corn, thawed, drained
1/2 lb
velveeta cheese, cubed
2/3 c
crushed tortilla chips
1/2 tsp
mexican seasoning
2 Tbsp
chopped cilantro, i use parsley


1Cook and stir onions and pepper in 2 tablespoons of butter; reduce heat to low.

Stir in corn and processed cheese cubes.. Cook 5 to 7 minutes or until cheese is melted and mixture is thoroughly heated, stirring occasionally.

2Melt remaining butter in separate pan; stir in tortilla chips and seasoning. Cook over medium heat 3 minutes; stir in cilantro.

3Spoon corn mixture into serving bowl, sprinkle with tortilla mixture. Sprinkle with additional cilantro and red pepper.
