Creamed Onions

I have a book with taped recipe clippings I did as a hobby back in 1978 and this is one I found to be great with fried fish or even a meatloaf.I have even added fried liver to this dish to make it into a main dish. Hope you try and enjoy.

Ingredients

2 lb
onions, sliced
1/4 c
butter
1/4 c
flour
2 c
heavy cream
pinch
each of nutmeg, salt, black pepper
2 dash(es)
hot pepper sauce *opt*

Directions Step-By-Step

place onions in deep skillet, cover with water and simmer until tender. pour off any water and set onions aside for now

In same skillet melt butter until bubbly
slowly stir in flour under high heat

turn heat down to medium and slowly add cream,( I scald cream in a seperate pot before adding) stirring constantly

cream should thicken nicely, add spices

return onions to skillet and heat thru
serve with your main dish

I have used a mixture of type of onions, such as some green tops snipped in as well.
I have on occassion added 1 teaspoon of sugar if the onions in season are not sweet enough.
