1place the corn, scallions and jalapenos in a bowl
2Put all the dry ingredients in a second bowl.
3Mix the butter, eggs and milk together.
4Add the flour to the milk mixture and then add the corn mix. Just mix until integrated.
5Spoon into hot oil and fry until brown, flip and continue until done. Cook in batches, placing cooked fritters on a cooling rack over paper towel lined baking sheet in a 200 degree oven to keep warm.
