Zinnia's corn and bacon casserole takes creamed corn to the next level. Bacon adds a smoky flavor and satisfying crunch. The tangy sauce is a nice contrast to the sweet corn. Onion, garlic, and fresh chives add flavor to this easy side dish.

Ingredients For corn and bacon casserole

  • 6 slice
    bacon
  • 1/2 c
    chopped onion
  • 2 Tbsp
    all-purpose flour
  • 2 clove
    garlic, minced
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 c
    sour cream
  • 3 1/2 c
    corn
  • 1 Tbsp
    chopped fresh parsley
  • 1/2 c
    half and half
  • 1 Tbsp
    snipped fresh chives

How To Make corn and bacon casserole

  • Frying bacon.

    Preheat oven to 350 degrees F. In a large skillet, cook the bacon until crisp. Drain, reserving 2 tablespoons of the drippings. Crumble the bacon and set aside.
  • Sauteeing onions in bacon grease.

    Add the onion to the drippings and saute until tender.
  • Add flour, garlic, salt, and pepper.

    Add the flour, garlic, salt, and pepper. Stir and cook until bubbly. Continue to stir and cook for 1 minute more.
  • Stir in sour cream.

    Remove pan from the heat and stir in sour cream until smooth.
  • Corn, parsley, and half the bacon added.

  • Half and half stirred in.

    Add the half and half and stir. Return pan to the heat and cook until the corn is cooked and the mixture thickens up. Pour mixture into a 1-quart baking dish.

    Bake for 20-25 minutes. Sprinkle with remaining bacon and chives.
