Coconut Rice with Snap Peas

- uncooked white rice, (jasmine is good)
- 1 can(s)
- lite coconut milk + enough 1% milk to make 2 cups liquid
- 1 box
- sugar snap peas thawed
- chopped tomato
1Heat butter and add rice, salt & pepper and toast the rice grains in butter about 2 min.
2Add the 2 cups liquid to rice & cook until tender.
3Heat snap peas in microwave until warmed through. No need to cook them any longer if you want them to remain snappy.
4When rice is done, fold in snap peas and chopped tomatoes. Serve immediately.
