1Chop equal parts of all the vegetables and put in a large pot or dishpan.Combine equal parts of sugar,water and vinegar.pour over the vegetables and stir to combine.
2Put several tablespoonfuls of pickling spice tied up in a piece of cheese cloth.I put it in a new Knee Hi and tie up the top.cook until vegetables are done.Remove the pickling spice and pack chow chow into clean hot jars.Wipe the top of the clean jars with wet rag,seal hot jar lids and invert on clean cloth for 2-3 minutes.Invert onto counter top and lid jars cool.Leave on the counter top for 24 hours.
