Ingredients For chilled lemon asparagus salad

1 bunchfresh asparagus

1lemon or more to taste

60 ml(1/4 cup) shredded parmesan cheese

10 ml(2 teaspoons) sea salt
How To Make chilled lemon asparagus salad

1Snap or slice the stem ends off the asparagus and discard.

2Steam stalks in a covered steaming tray, strainer or colander over a pot of boiling water for approximately 3 minutes.

3Remove from heat and immediately rinse with cold water.

4Zest or finely grate the lemon peels and set aside.

5Arrange asparagus in a shallow container and squeeze lemon juice over the top, completely saturating it.

6Sprinkle sea salt over asparagus and refrigerate for at least 20 minutes, allowing stalks to fully chill.

7Transfer asparagus to a chilled plate and sprinkle with Parmesan cheese and lemon zest. Serve immediately.
