This is a go-to recipe a friend of mine, Cathy, gave me. Great for summer BBQ's or as a side dish.

Ingredients For cathy's fresh broccoli salad

2 bunchbroccoli, chopped

1red onion

6 ozmonterey jack cheese, shredded

1/2 lbbacon, fried crisp and crumbled
- DRESSING
-
1 cmayo
-
4 Tbspvinegar
-
1/2 csugar
How To Make cathy's fresh broccoli salad

1Mix all ingredients except bacon in a shallow dish and pour dressing over - mix well and refrigerate covered. Make 24 hours ahead and every so often give the dish a shake to distribute. When you are ready to serve, toss bacon in.

2You can decrease to 1/4 cup sugar if you like and substitute nuts and raisins for the bacon.
