California Blend Cassrole

- large bag of california blend vegatables in the frozen section
- 1 large
- onion chopped
- 1 can(s)
- cream of chicken soup
- egg slightly beaten
- 16 oz
- cheese, shredded,cheddar or your choice
- 1 c
- sleeve (salteen or ritz crackers crushed)
- salt and pepper to taste
- add mushrooms
- or to make a complete meal add chicken breats
1Thaw the California Blend veggies.Add the chopped onions to the veggies. Mix these together with cheese.
2In another bowl.Mix together the mayonnaise,eggs,soup,salt and pepper.
3Spray a 9x13 baking dish with cooking spray.Preheat the oven to 350.
4Pour the mayonnaise mixture over the veggie's and mix to coat well.
5Pour into the baking dish and then top with the crushed crackers of your choice.
6Bake in a preheated over for about 1 hr 20 min or till golden brown
7If you add the chicken to the cassrole.This makes a good on dish meal.Just add the chicken breats I cook mine with a little olive oil on the stove top about 10 minutes each side before adding to the casserole,drain well on paper towels .Add about 15 minutes to the baking time....
