Okra and Tomatoes

This is a recipe that my sister-in-law made for us during our visit with them in Kansas. I'm not sure where she found the recipe.

Ingredients

2 Tbsp
olive oil
2-3 clove
minced garlic
1 c
chopped onion
1 c
bell pepper, cut in bite size pieces
2 c
okra, cut (fresh or frozen)
14 1/2 oz
diced tomatoes
8 oz
tomato sauce
2 tsp
sugar
1 c
water
1 tsp
louisiana cajun seasoning

Step-By-Step

1In a large skillet; Saute garlic in the olive oil for 1-2 minutes.
2Add onion and bell pepper to the skillet. Saute 3-4 minutes.
3Add okra to the skillet mixture. Saute 4-5 minutes
4Add the tomatoes, tomato sauce, water, sugar and cajun seasoning.
Simmer until vegetables are crisp tender.
5Her original recipe called for 2 cups of tomato juice. I don't normally keep that on hand so I substituted tomato sauce, sugar and a little water.
This is really good warmed up the next day.
