BUTTER FRIED CUKES

I love reading old cookbooks, and have a collection of many, old church cookbooks from all over America.
While rifling through the pages, I came across this nice little recipe, and had to cook them little buggers up!
Quick and easy, and don't we all love a little butter????
I am also considering doing a Tempura and Panko combination preparation next time.
I Don't know why?? This butter fried recipe is delicious!

Ingredients

2 Tbsp
butter
2 medium
cucumbers
1/4 c
flour
1/2 tsp
salt
1/2 tsp
curry powder....optional
4 Tbsp
finely chopped parsley

Directions Step-By-Step

Peel the cucumbers and slice them all 1/2 inch thick.
Dry the slices by wrapping them in absorbent paper for a few minutes.
Then shake them in a bag containing flour salt and curry powder.
Melt the butter in a large frying pan.
Add the floured cucumber slices and fry about 3 minutes on each side for a golden color.
Do not over cook.
Serve when ready,sprinkled with parsley.
