Ingredients For baked zucchini or squash

2 mdzucchini or squash, cut 1/4" thick

1/2 cpanko bread crumbs

salt & pepper, to taste

1/8 cparmesan cheese

2 x lgegg whites
How To Make baked zucchini or squash

1Preheat oven to 475 degrees F.

2In one small bowl, stir together panko, salt, pepper & cheese. Place the egg whites in a separate bowl. Dip zucchini slices into the egg whites, then coat the panko mixture. Place on a greased baking sheet.

3Bake for 10 minutes, flip over & bake for another 10 minutes, until browned & crispy.
