Ingredients For baked zucchini or squash

  • 2 md
    zucchini or squash, cut 1/4" thick
  • 1/2 c
    panko bread crumbs
  • salt & pepper, to taste
  • 1/8 c
    parmesan cheese
  • 2 x lg
    egg whites

How To Make baked zucchini or squash

    Preheat oven to 475 degrees F.
  • 2
    In one small bowl, stir together panko, salt, pepper & cheese. Place the egg whites in a separate bowl. Dip zucchini slices into the egg whites, then coat the panko mixture. Place on a greased baking sheet.

    Bake for 10 minutes, flip over & bake for another 10 minutes, until browned & crispy.
