Ingredients

FOR BRUSSELS SPROUTS
fresh or thawed frozen brussels sprouts cut in half
olive oil
sea salt
freshly cracked black pepper
FOR THE MUSTARD SAUCE
1 lb thick cut bacon-cooked, crumbled-set aside-reserve 4 tblsp of bacon drippings
4 Tbsp diced shallots
3 Tbsp dijon mustard
drizzle of olive oil
FOR THE TOPPING
blue cheese crumbles

This is delicious and a side dish that is gone the minute I get it to the table!

 

Directions

Pre heat oven to 375

Coat brussels in olive oil salt & pepper.

Roast until very deeply golden brown and tender.

In a frying pan-fry bacon-set aside cooked bacon and crumble

Reserve 4 tblsp of bacon grease.

In warm pan, add shallots and cook until tender absorbing bits from pan.

Whisk in mustard, reserved bacon grease and remove from heat.

Drizzle olive oil to form a dressing.

In a serving dish, toss brussels with dressing.

Crumble atop with bacon and blue cheese.

Serve warm! Enjoy!

This sounds wonderful. I have the ingredients with the exception of the blue cheese, I can get that and post a picture if you would like?
