One of my mom's handwritten recipes. She made these for holidays and even us kids ate them.

Ingredients

1 lb
carrots, sliced
1/4 c
apricot preserves
1 Tbsp
butter
1 tsp
lemon juice
1/8 tsp
nutmeg

Step-By-Step

1Put carrots in a saucepan with enough water to cover. Next bring to a boil. Cover and cook for 8 minutes or until crisp and yet still tender. Drain. Add remaining ingredients and continue to cook while stirring over medium heat for 3 minutes or until preserves are melted and carrots are coated
2Garnish with a bit of grated lemon or orange rind.
