Ingredients

1/2 c
margarine or butter
3/4 c
green pepper, chopped
1/3 c
onion, chopped
1 can(s)
7oz cream style corn
1 can(s)
7oz whole kernel corn, not drained
3
eggs, well beaten
1 pkg
8.5 oz corn muffin mix
1 c
cheddar cheese, shredded (4oz)

Step-By-Step

1Preheat oven to 350.

2In small skillet, melt margarine.
Add green pepper and onion.
Saute until crisp and tender

3In large bowl, combine the two corns, eggs, and muffin mix. Blend well.

4Add onion/pepper mixture .. and mix well.
Pour into 2 quart casserole dish.
Sprinkle with cheddar cheese.

5Bake until firm or set (about 55-65 minutes)
Let stand 5 minutes before serving.
