Roasted Tomatoes and Zucchini

- 2 medium
- zucchini, chopped
- 20 large
- cherry tomatoes, halved
- olive oil flavored cooking spray, nonfat
- 1 tsp
- sea salt
1Preheat oven to 450°F. Line a small baking sheet with aluminum foil (for easy clean-up), and lightly mist the foil with the cooking spray.
2Place tomatoes and zucchini on baking sheet, and lightly mist with the cooking spray. Then sprinkle the sea salt evenly over the vegetables.
3Roast in oven until vegetables start to lightly char, about 15-20 minutes. Serve immediately.
