This is the recipe I used, when we had a garden bounty of tomatoes and okra. Once again, from the Better Homes and Gardens cookbook, that my grandmother, mother, and I all have used our whole grown-up lives.

Ingredients For okra and tomatoes

  • 1 1/2 c
    fresh okra, cut in 1/2 inch slices or 1 (10 oz) package frozen okra
  • 1/2 c
    chopped onion
  • 1/2 c
    or less, green bell pepper, chopped
  • 2 Tbsp
    cooking oil
  • 1 Tbsp
    sugar
  • 1 tsp
    all-purpose flour or unbleached all-purpose flour
  • 3/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 3 md
    tomatoes or a 15 oz. can of tomatoes (more, if you like more tomatoes versus okra)

How To Make okra and tomatoes

  • 1
    Cook the fresh okra, cut in 1/2 inch slices, in a small amount of boiling salted water, for 10 minutes; drain. (Or, cook one 10 oz. package of frozen okra, according to package directions; drain.)

    Cook onions and green bell pepper, in the cooking oil, until tender, but not brown; blend in sugar, flour, salt, and pepper.
  • 3
    Add, fresh peeled and quartered tomatoes, or canned ones, if that is all you have, and the already cooked okra; heat through. Makes 4 servings.
