- 2 - 16 oz
- pkgs. frozen cauliflower (or two heads fresh)
- 8 oz
- cream cheese
- 4 Tbsp
- heavy cream
- 3 - 4 c
- shredded cheddar cheese
- salt and pepper to taste
1Cook the cauliflower until tender; drain. In a 9 x 13" casserole dish, soften the cream cheese in the microwave about 90 seconds on high (watch carefully as it will burn easily). Whisk in the heavy cream until smooth, then stir in about 2 cups of cheddar cheese.
2Add salt and pepper and stir. Add the cauliflower and stir to coat. Top with the remaining cheese and bake at 350 degrees for 35 minutes; until bubbly and brown on top.
3Let it set a few minutes. Take this to potlucks and watch it disappear!
4You can alter this recipe to make it diet friendly by using low fat cream cheese and milk. This makes a full 9 x 13" casserole. ENJOY!
