Got this from my sister-in-law years ago. This has been a favorite of the family ever since. I don't like it quite as hot, so I cut back on onions and cheese.

Ingredients

2 sm. can(s)
veg all
1 c
miracle whip
1
med. chopped onion
1 small
package of monterey jack cheese w/ jalapenos
1 tube(s)
ritz butter crackers
1 stick
butter, melted

Directions Step-By-Step

Pre-heat oven to 350 degrees. Drain Veg All. Shred Monterey jack cheese w/jalapenos. Melt butter. Chop onions finely. Take 1 tube of Ritz crackers and make crumbs.

In med. bowl, add Veg All, Shredded Cheese, onions and Miracle Whip. Mix well.

In small bowl, mix cracker crumbs and butter.

Spray or butter 10x13 glass casserole dish.

Spread vegetable mixture into dish. Top with buttered cracker crumbs. Bake 40 min.
