Asparagus with Fresh Tomato Yogurt Sauce

Ingredients

2 lb
asparagus
1/3 c
plain yogurt
2 Tbsp
mayonaise
1 Tbsp
lemon juice
1 c
diced ripe tomatoes (about 2 medium)
salt and fresh ground pepper

Directions Step-By-Step

Cut asparagus into 2-3 pieces, cook in boiling water until just tender and still bright green

Drain and rinse with cold water and pat dry with paper towels

While the asparagus is cooking combine the yogurt, mayonnaise, lemon juice, tomatoes and salt and pepper

Place the asparagus on a plate and spoon sauce across the middle.

Serve at room temperature
