Asparagus with Fresh Tomato Yogurt Sauce

Ingredients

2 lb
asparagus
1/3 c
plain yogurt
2 Tbsp
mayonaise
1 Tbsp
lemon juice
1 c
diced ripe tomatoes (about 2 medium)
salt and fresh ground pepper

Step-By-Step

1Cut asparagus into 2-3 pieces, cook in boiling water until just tender and still bright green
2Drain and rinse with cold water and pat dry with paper towels
3While the asparagus is cooking combine the yogurt, mayonnaise, lemon juice, tomatoes and salt and pepper
4Place the asparagus on a plate and spoon sauce across the middle.
5Serve at room temperature
