Ingredients

6
eggs, separated at room temperature
2 pkg
(10 ounces) frozen chopped broccoli or frozen chopped spinach
1
onion
1
zucchini, coarsely grated
4 Tbsp
matzo meal
2 Tbsp
vegetable soup mix
1/2 c
mayonnaise
salt and pepper to taste

Step-By-Step

1Cook broccoli and drain.

2Put in blender with egg yolks, onion, 2 tbsp. vegetable soup mix and mayonnaise.
Add grated zucchini and matzo meal.
Beat egg whites separately.
Fold into vegetable mixture.

3Grease a 9 X 13 inch pan.
Bake at 350 degrees till browned for 1 hour.
