Sweet Tea Rice with Jalapeno. Peaches, and Pecans

Ingredients

2 c
sweet tea
1 c
uncooked long grain rice
1/2 tsp
salt
2 Tbsp
butter
1/2 c
chopped pecans
1
large jalapeno, peeled and diced
1
large fresh peach, peeled and diced
1 Tbsp
fresh chives, chopped
1/4 tsp
salt
1/4 tsp
pepper

Directions Step-By-Step

Bring tea to a boil, stir in rice and 1/2 tsp salt. Cover, reduce heat to low and simmer 20 minutes, until tea is absorbed.

Meanwhile, melt butter over medium heat, add pecans, and cook, stirring constantly, until toasted, 3-4 minutes. Add jalapeno and saute 1 minute.

Stir in hot cooked rice, peaches, chives, salt, and pepper.
