Ingredients

1 can(s)
sweet potatoes (yams) drained (40 oz)
1 pkg
fresh whole cranberries (not always available, so i use a good quality dried and reconstitute them in hot water and then drain)
1 1/4 c
sugar
1 small
orange sliced with skin and quartered
1/4 c
orange juice
3/4 tsp
cinnamon
1/4 tsp
nutmeg
1/2 c
pecan pieces

Directions Step-By-Step

Combine cranberries, oranges, and sweet potatoes (gently so you don't break down the sweet potatoes too much) in 2 quart casserole. Combine orange juice, spices and sugar. Pour over the top ands sprinkle with pecans. Bake at 375 uncovered about 30 minutes.

This recipe was doubled to serve today in a 9 X 12 dish, so I cut down on the sugar to about 2 cups total.
