I am sure I'm not the only one who ends up with leftovers. Mashed Potato Cups are great because they only require a small amount of mashed potatoes. Want Mashed Potato Cups, but don't have any leftovers on hand? Just whip up some instant taters and refrigerate. They are great as a side dish, appetizer or for a breakfast spud!
