Kicked Up Potato Salad

Ingredients

4 lb
yukon gold potatoes
2
jalapenos, seeded and diced
3
green onions, chopped
4 slice
bacon, cooked and crumbled
4
hard boiled eggs, sliced
2 Tbsp
prepared horseradish
1 c
sour cream
1/2 c
mayonnaise
1 1/2 tsp
salt
1 tsp
black pepper

Step-By-Step

1Fill a pot with water. Add salt and potatoes and bring to a boil. Cook for about 15 minutes or until tender. Drain and set aside to cool.
2In a large bowl, combine sour cream, horseradish, mayo, jalapeno, green onion and black pepper. Mix until fully incorporated.
3Fold bacon, potatoes, and hard boiled eggs into the mixture. Cover and refrigerate for 1 hour before serving.
