A delicious sweet potato recipe from Boston Market. I tweaked this recipe to suit my family's taste.

Ingredients

1/4 c
melted butter
1/4 tsp
salt
1/4 tsp
cinnamon
1/2 c
dark brown sugar
1/4 c
heavy cream
2 c
mini marshmallows
6 c
mashed sweet potatoes or 2 (40 ounce) cans sweet potatoes, drained

CRUST

1/4 c
flour
1/2 c
dark brown sugar
1/2 c
chopped pecans
1/2 c
coconut
1/4 c
melted butter

Directions Step-By-Step

Add the brown sugar, heavy cream, melted butter, cinnamon and salt to the mashed sweet potatoes and mix well.

Put into a 9 X 13 inch baking pan.

CRUST: Combine the flour, brown sugar, pecans, and coconut and stir together well.
Stir in the butter with a fork until you have a crumbly mixture.

Sprinkle the crumbly mixture over the sweet potato mixture.
Bake at 350 degrees for 60 to 70 minutes or until top begins to brown slightly.

When you remove the casserole from the oven, immediately spread the marshmallows over the top.
Let this sit for about 10 minutes as the heat from the casserole will melt the marshmallows.
