These lacy, crispy potatoes are fantastic topped with gravy or sour cream or applesauce!

Ingredients

2 lb
potatoes (6 medium)
1/2
onion, grated
2 Tbsp
flour
2
eggs, beaten
1 1/2 tsp
salt
1/4 tsp
pepper
1/4 tsp
grated nutmeg
2 Tbsp
minced parsley
butter or oil for frying

Step-By-Step

1Peel potatoes; grate and squeeze water out. Add onion and mix.
2Add flour, eggs, salt, pepper, nutmeg and parsley. Mix.
3Cook like pancakes on hot buttered or oiled griddle.
