Baked Potato Casserole

- 8 medium
- potatoes (about 2 1/2# total) peeled & cut into 1" cubes
- 1 c
- evaporated milk
- 1/2 c
- sour cream, lite
- 1 tsp
- 1/2 tsp
- black pepper
- 2 c
- shredded cheddar cheese (divided)
- 6 slice
- cooked & crumbled bacon (divided)
- sliced green onion (optional)
1Place potatoes in a lg. saucepan. Cover with water and bring to a boil. Cook over medium-high heat for 15 to 20 min. or until tender, drain.
2Preheat oven to 350 degrees. Grease a 3 qt. casserole dish.
3Return potatoes to saucepan, add evaporated milk, sour cream, salt & pepper. Beat with hand-held mixer until smooth. Stir in 1 1/2 cups of cheese and half of the bacon. Spoon mixture into prepared casserole dish.
4Bake for 25 to 30 min. or until heated though. Top with remaining cheese, bacon and green onion. Bake for additional 3 miin. or until cheese is melted.
