This is a light and lemony pasta dish that is terrific served with seafood or chicken. You could add grilled shrimp to this dish for an entrée that is great on a warm summer's night. Great to make ahead of time !

Ingredients

1 1/2 c
uncooked orzo
2
lemons
1 Tbsp
lemon zest, grated
4 Tbsp
lemon juice
2 Tbsp
olive oil
1/3 c
sliced almonds
1 Tbsp
chives, dried or fresh
1 Tbsp
basil, dried or fresh
1 tsp
dried parsley
salt and pepper to taste

Directions Step-By-Step

Cook orzo according to package directions. Drain and rinse.

While orzo is cooking, zest lemon and juice it. If using fresh herbs go ahead and chop them.

In a bowl add olive oil. While stirring with a whisk add in lemon juice a little at a time to incorporate into olive oil.

Add herbs and zest to olive oil and lemon mixture then pour over orzo. Add the almonds, salt and pepper to taste, and stir well. I like to serve this dish cold. Great to make ahead !

I like to serve this with seafood or with Chicken Breast with a Spicy Orange Glaze.
