Better Than The Blue Box Mac & Cheese

- 1/2 lb.
- elbow macaroni
- 4 slices
- smoked bacon
- 1 cup
- evaporated milk
- 3/4 tsp.
- ground dry mustard
- 1/2 tsp.
- tobasco sauce
- 10 oz.
- block, sharp cheddar cheese, grated
- 1 tsp.
- ground black pepper, to taste
1Cook, drain and crumble 4 slices bacon; set aside.
Cook pasta per pkg. instructions.
Meanwhile, whisk all ingredients except the bacon & cheese until blended.
When pasta finishes cooking, strain and quickly return to the pan. Immediately, pour egg mixture over pasta and stir to combine and begin to cook the egg – add bacon & cheese and continue to stir over low heat until cheese is melted and the macaroni has a smooth, creamy, cheesy sauce.
Add ground pepper to taste.
Serves 4 – 6
OPTION: Place in oven proof serving dish and slide under the broiler for a minute to lightly brown the top.
