Stove Top

Ingredients

2 c
dry black beans
2
bay leaves
1/4 c
olive oil
1 large
red bell pepper chopped
1 large
onion chopped
6 clove
garlic minced
1 Tbsp
oregano
1 Tbsp
cumin
1 c
sugar
1/4 c
sherry wine
1/2
red onion chopped
1/4 c
fresh cilantro chopped

Directions Step-By-Step

Soak beans in salted water to cover 3 inches overnight.
Drain and place in a large soup pot with bay leaves and fresh water to cover 3 inches. Bring to a boil and reduce to a simmer and cook until beans are tender about 2 hours.

After an hour and a half heat oil over medium heat and add bell pepper and onion and cook until tender about 7 minutes. Add garlic, oregano, and cumin.

Place mixture in pan with beans and add sugar, sherry, and red onions. Cook another 30 minutes. Salt to taste and add cilantro.
