- yellow rice
- 16 oz
- mixed vegetables, frozen or 2 15 0z cans.
- 1 c
- cheese, shredded (cheddar)
- 1 can(s)
- cambells cream of celery soup
- 3/4 c
- mayo (i use hellmans)
- 1 c
- chopped onion
1Boil mixed vegetables until done. Put in 2 quart casserrole dish. Add the cream of celery soup and mayo.
2Boil rice. Chop onion while rice is boiling and add to vegetables. Mix in half of the cup of cheddar cheese.
3When yellow rice is done add it to the vegetable mixture and mix it in. Sprinkle the other half of cup of cheddar cheese on top.
4Pre heat oven to 350 degrees. Cook casserole for 35 minutes. (I also sometimes add cooked chop turkey sausage or chicken to the mixture for a full meal deal).
