large sweet potatoes, peeled and cubed
chopped nuts (pecans/walnuts) optional
Preheat oven to 325°. Cook the potatoes in boiling water until fork tender.
Drain potatoes and whip with electric mixer.
Add sugar, eggs, salt, butter, evaporated milk and vanilla. Pour into lightly greased casserole dish.
Bake in preheated oven for 25 minutes.
Remove from oven and place marshmallows and nuts (optional) on top. Return to oven for approximately 5 minutes or until marshmallows are golden brown.
