Quick - Sante Fe Casserole

Some grocery stores carry a pre-packaged rice/ bean/poblano pepper mix in the frozen veggie isle!

I like to serve with grilled chicken that is sliced thin at an angle.

Ingredients

1 pkg
boil in the bag rice
2 medium
poblano peppers - diced
1/4 small
yellow onion - chopped
1 can(s)
kernel corn - drained
1 can(s)
black beans - rinsed
1 can(s)
cream of poblano soup
1 1/2 c
milk - 2%
1 clove
garlic
1 1/2 tsp
ground pepper
2 c
cheddar cheese, shredded

Step-By-Step

1Pre-heat oven to 375
2Mix all ingredients except cheese, and reserve 1/2 tsp of ground black pepper.
3Pour into medium baking dish.
4Bake on 375 for 30 minutes.
5Remove from oven and top with shredded cheese.
6Sprinkle with remaining ground black pepper.
7Return to oven and cook remaining 15 mintues or until cheese is melted through and hot.
