Ingredients For passover spinach casserole

  • 2 pkg
    10 (ounces) frozen chopped spinach
  • 1/2 c
    margarine or butter
  • 1-2
    crushed clove garlic
  • 1 Tbsp
    potato starch
  • 2 Tbsp
    dried onion soup mix
  • 2
    eggs, beaten
  • 1/2 c
    matzo meal

How To Make passover spinach casserole

  • 1
    Cook spinach; drain well. Melt margarine in skillet and saute garlic. Blend in potato starch, then onion soup mix. Add a little water. Remove from heat.

    Stir beaten egg and matzo meal into spinach. Add margarine mixture, then salt and pepper to taste.

    Pour into well greased 1 1/2 quart casserole dish. Bake at 350 degrees for 25 minutes.
