I play with the amounts used in this recipe depending on how many may be eating, when it is just my husband and I, I use the amounts listed. When invited out and I ask, "Can I bring anything?" this is often requested. The next time I make this, I will take pictures to add.
Cut the broccoli and steam until tender crisp. Remove from the pan and cut into small pieces and set aside.
2Crush the packages of Ritz crackers and place in the bottom of a 2 quart casserole dish. Melt the stick of butter and add to the crackers, combine to form your crust
3Heat a small skillet over medium heat, add the mushrooms to sweat down. Once they have browned up nice and liquid begins to form, add about a tablespoon of butter, the onions and garlic. Combine and let the onions and garlic begin to cook.
4Combine the mushroom - onion - garlic mixture to the chopped broccoli. Add in the parmesean and 1/2 of the mozzarella and mix. Add salt and pepper to taste.
5Add the combined mixture to the already prepared cracker crust and top with remaining mozzarella. Place in the oven for approximately 30 minutes or until heated through and the cheese topping has melted.
