Ann's Corn Casserole

I got a version of this recipe from a dear friend. I've tweaked it to my family's taste. By popular demand, I bring it to all family reunions!

Ingredients

16 oz can(s)
cream-style corn
16 oz can(s)
whole kernel corn, drained
1/2 c
onion, chopped
1/4 c
bell pepper, chopped
1 small
jar pimientos, diced
1 c
ritz cracker crumbs
1 c
milk
3
eggs
1 c
cheese, shredded
1 stick
butter, melted

Step-By-Step

1Whisk milk and eggs together. Add in cracker crumbs. Let stand 15-20 minutes.
2Saute onion and bell pepper in 2 tablespoons butter. Add to cracker mixture.
3Add remaining ingredients; mix well.
4Pour into 9 X 13 casserole dish. Bake at 350 deg. for about 1 hour.
