Sylvia's Mexican Rice



My co worker and friend,Sylvia gave me this recipe many years ago. I always made it like this but never added cumin or oregano, both are delicious.

pinch tips: Non-Stick Rice Every Time


2 t. oil
1 med onion,diced
2 c long grain white rice
6 cloves garlic,mashed
1/2 c tomato sauce
4 c chicken broth
2 t salt
1/2 t cumin
1 t oregano
1/4 t black pepper
1 carrot,diced

Directions Step-By-Step

In large skillet heat oil.Saute onion and rice coat with oil heat until rice is opaque,stirring frequently.Add tomato sauce,mix until rice is an even orange color add remaining ingredients.Bring to a boil on high flame.cover,reduce heat to simmer for 20 minutes.Remove from heat,let sit for 10 minutes.
