SOPA DE ARROZ (MEXICAN RICE)
|1 c||long grain rice, uncooked|
|1/2 small||onion chopped|
|1 clove||minced garlic|
|1 small||tomato peeled and chopped|
|1/4 c||fresh or frozen peas and diced carrots|
|2 c||boiling chicken stock|

Saute the washed,drained rice in the hot oil until golden but not brown. Add the onion, garlic, fresh tomato and vegetables and cook slightly. Add the boiling stock and salt.Return to boil,then lower heat, cover and cook on low setting until rice is tender and liquid has been absorbed. Toss lightly with a fork before serving.
