This is one of the best ways I know of to get kids to eat broccoli. When my kids were little, they would ask for this side dish at least once a week. It's ecomonical and goes with pretty much anything.

Ingredients

1 1/2 c
minute rice
1 1/2 c
water
1 pkg
frozen chopped broccoli
1 can(s)
cream of mushroom soup, undiluted
1 jar(s)
cheese whiz or other processed cheese spread (small jar)

Directions Step-By-Step

Cook rice and water as directed on package. Cook broccoli and drain well.

Mix cooked rice, broccoli, soup and cheese and place in a 9x13 glass baking dish sprayed with non-stick cooking spray. Bake 45 minutes, uncovered, at 375.

Almost any cream soup can be used in this. If using broccoli cheddar soup, simply reduce or omit Cheese Whiz.
